No Bake Cookies Revisited
Some people call these raw cookie dough, or energy bites, or granola. It's really nothing more than a spin off of the no bake cookie. Anyhow I combined a couple recipes and changed a few ingredient. Full of flavor and just enough sugar to curb your cravings and somewhat healthy. You could stir in pumpkin seeds, raisins, or anything that makes you happy. Enjoy!
4 cups oats
1 cup walnuts/ or 1 cup almonds
2 cups pitted medjool dates
1 cup water
3 T cocoa or cacao powder
1/2 cup peanut butter or almond butter
1 cup cacao chips
2 t vanilla
In a blender combine 2 cups of the oats, walnuts, dates, water, cocoa, and honey. Blend until desired consistency. Transfer to a bowl and stir in peanut butter and the remainder 2 cups of oats, cacao chips and vanilla. Roll into balls and refrigerate. Makes 36 servings.
