Eggless Egg Salad
Let me say this first, I really dislike vegan dishes that are pretending to be something they are not.  So in light of that- this is pretty yummy to say the least. 
Cut a few slits in  an acorn squash and microwave for about 6 minutes or until tender.  Slice in two and scoop out the seeds.  Scoop out 1/2 of the acorn squash and let cool in a bowl. Once cooled crumble the squash.  Carefully stir in mayo and salt and pepper.  Serve with Dave's killer Break or some pita chips.
 Marinated Cucumbers- just remind me of summer and harvest time. My mom use to make this at least once a week.  It's also good on toasted French bread- makes for a yummy bruschetta.
add all ingredients and enjoy.
