Feingold Stage 1 Recipes

I could not fathom going a whole summer without tomatoes, so I spent the weekend experimenting with Feingold friendly ingredients.  This Un-Salsa is amazing! We added a bowl of warm beans and some guacamole and it was a hit by everyone.

Feingold Stage 1 Salsa Bar

Un-Salsa

Edit! So the salsa was a bit bland day two so adding a few extra ingredient of salt, garlic, and yellow onion

5 oz of Un-Ketchup (Feingold Recipe Book)
5 oz of water
2 green onions
1 yellow onion
1/2 red onion
1/2 T cumin
1 T Cilantro/ or 1/2 cup fresh cilantro
juice of 1 lime
1 garlic clove
1 t salt
2 medjool dates
Blend in blender until desired consistency.

Fruit Salsa

1/2 a papaya
1/2 cup pineapple
1 mango
juice of one lime
juice of one lemon
2 green onions
1/2 red onion
4 pea pods
1 T Cilantro/ or 1/2 cup fresh cilantro
2 medjool dates
Blend in blender until desired consistency

Guacamole

4 avocados
2 T Un-Salsa
1 tsp Garlic Powder
1 tsp salt
juice of one lime
Blend and enjoy!



Tropical Freezer jam
3 cups of frozen mango, papaya, pineapple, guava thawed
3 cups of sugar
1 packet of fruit pectin
2 drops lemon essential oil
Simply smash the fruit to desired consistency stir in 3 cups of sugar until mostly dissolved.  Heat pectin with 3/4 cup water on stove. Boil 1 minute and stir into fruit.  Divide into three small jars. Will refrigerate nicely for 3 months or freeze for one year.
Tropical Ice Cream

3 cups frozen mango, papaya, pineapple, guava
1 cups almond, cashew or coconut milk
2 medjool dates
Blend in Blender- eat immediately like icecream or freeze into ice-cream pops
